Apricot filled with Clotted Cream and Pistachio / Kaymaklı Fıstıklı Kayısı Dolması

Malatya is the Turkish city that is well known for apricots. They even have festivals from it. This desert is very easy made. Looks great in a serving dish. Almost no cooking. Easy to eat – it is actually a finger food that can be served in open buffets or cocktails.

There are many variety of plates we use apricots from marmalades to kebabs.

Ingredients

Instructions
  1. Wash the dry apricots. Put them in a bowl and soak with water. Keep in the water for 2-3 hours or overnight.
  2. Put the apricots in a pot. Add water just enough to cover the bottom. Put two tbsp butter on top.
  3. Cook on medium heat until butter melts and the water is soaked up. Stir well for about 1-2 minutes. Close the heat.
  4. Pour the apricots in a serving dish. Wait for a few minutes until they cool.
  5. Take each apricot fill it with a tsp of cloated cream and sprinkle with grounded pistachio. You may also want to add a piece of walnut in it to make it richer and more delicious.
  6. There, already finished. Enjoy.
