Some treats are so granted, plain and easy I hesitate to post them. On the other hand I have always loved to have these bread slices when I was a child and now I prepare it for my own kids. So I decided to go ahead and post it.
My mother used to prepare this when we had some left over or dried up bread, not to throw them away. Some people use less expensive cheese for such treats and for börek. I prefer to use the cheese I use for breakfast, it makes a huge difference.
You can play around the recipe, you can choose to spread some butter on the bread before spreading the cheese or you can change the type of bread you choose or you can leave out the egg and/or the red pepper. I am sure you will find your own best; this is mine. Now I have to prepare this again tomorrow morning. If you are not used to having cheese in the morning; you can prepare it for tea-time.
