Carrot Salad with Yogurt / Yogurtlu Havuc Salatasi

All the family members like this dish. It is generally served in pubs with raki and fish. Mostly considered as a fish side dish, but goes just as well with any meat or poultry. Although it is called a salad it can be served as a pate as well. You just need to spread it generously on nice pieces of bread.

My son always pushes me to prepare it when we have fish at home. I really don’t know why I am reluctant sometimes as it is really easy to prepare and you can hardly go wrong with it. It has rather basic steps. Perhaps the only challange may be the salt. So be miser about it and taste in between. Another poin is you should whatch out while you are cooking the carrots. They quickly get burnt or brown if you don’t keep an eye on them.

Many people add walnuts and red pepper flakes. I choose not to. It is totally up to you.┬á Afiyet olsun – have a nice meal.

Instructions
  1. Discard the corners and peel the carrots. Hand grate carrots using the coarse side of the grater. You can use the food processor if you don't have much time, but you will get better results using the grater.
  2. Heat oil in a skillet and add the carrots. Stir occasionally, lower the heat if necessary. Make sure they don't stick in the bottom and get burnt. Cook until carrots are softened; this should take about 10 minutes.
  3. Crush and mince the garlic. Add to the carrots. Cook for another minute.
  4. Let the carrots cool for 5 minutes.
  5. Use plain yogurt with little or no yogurt water. Mix the yogurt with the carrots. Also add the salt at this stage.
  6. Add and mix coarsely crushed walnuts and red pepper flakes. These two are optional. As kids generally prefer this dish without them.
  7. Garnish with chopped parsley or with black olives.
