Celery Root Salad with Yogurt / Yoğurtlu Kereviz Salatası

Celery SaladThis is so easy that you must give it a go. As I have said earlier; after I’ve learned that the amount of calories you spend eating celery roots is less than what you get from them, I often find a place for this celery root salad on my table.

In Turkey we eat the root of the celery more than the stalks. Actually it is a totally edible plant, the root, the stalks and the leaves are edible.

Celery roots are lumpy, brownish and last quite a while in the fridge. When you are buying pick ones that are medium sized. Too big ones might be empty in the middle and the small ones might be ripe. If they have stalks and leaves still on pick ones that are still green.

For this salad make ready all the salad ingredients listed in the below recipe before you peel the celery root. When peeled the white inside darkens very quickly so as soon as you peel start grating and mix with salad ingredients including yogurt. Don’t crush the walnuts too much; the walnuts should not turn into a powder. The yogurt should be plain and not too watery. The amount of yogurt should be just enough to cover the grated celery root all around.

You might want to slice an orange and place some salad on top of each salad to show off. Besides the salad tastes even better when you eat it together with the orange.

Instructions
  1. Use yogurt that is not too watery. Put the yogurt – about 2 glasses – in a mixing bowl.
  2. Add 2-3 minced garlic cloves.
  3. Add about half a glass of coarsely chopped walnuts.
  4. Add salt to taste.
  5. Grate the celery roots using coarser side of the grater. Immediately add to the yogurt mixture, so that the celery doesn’t darken.
  6. Garnish with red pepper flakes and/or dry mint flakes.
  7. As an alternative; cut thin slices of orange and put spoons full of celery root salad mixture on top of each slice.
