Somehow I don’t have a picture of the final, cooked borek for this Cheesy Borek with Sprinkling Mineral water and Baklava Phyllo Sheets. I am sorry and promise to add very soon, couldn’t resist posting anyway. I offered to dear friends recently and they all made positive comments about it.

Baklava phyllo sheets are required for this borek. I generally make it when I make baklava or twisted baklava as I end up with not using the whole pack. Besides it is easy to prepare and different from the other boreks we do with normal phyllo sheets or hand made boreks.

One thing to pay attention to is the phyllo sheets get dry very quickly. So as soon as you open the packet make sure to cover the sheets with a clean damp kitchen cloth to make sure they don’t turn into dry, unmanageable, paper-like sheets.

Baklava_sheetsFirst start with preparing the spread mixture. Mix eggs, sprinkling mineral water, oil and yogurt. Mineral water is used to make the borek softer and bouncier. Then move on with spreading open a baklava phyllo sheet on your working space and then using an egg brush make sure it is wet and oily all around with the spread mixture. Then lay another sheet on top of the first one and again spread the mixture. Continue until you have 5 sheets on top of each other. Then put about two table spoons of grated cheese as a line in one of the corners and curl towards the other side. You will achieve a a long borek looking like garden hose. Continue until all the material is finished.

Baklava Yufka

Garnish with nigella seeds and enjoy with friends and family at breakfast, coffee or tea time.

Instructions
Preparing the Borek
  1. Once you open the phyllo sheet package always keep the phyllo covered with a clean damp cloth, they become dry very quickly.
  2. Spread a phyllo sheet open completely in your working space. Brush all around with the spread mixture. Lay another sheet on top and repeat the brushing. Continue until you have repeated the same with 5 sheets on top of each other.
  3. Then in one of the corners put as a thin line grated cheese.
  4. Then gently curl towards the other side. It will look like a garden hose.
  5. Place the long, curled phyllo, into a buttered oven tray.
  6. Continue until all the material is finished.
  7. Cut to pieces to make the curls in servable sizes.
  8. Pour the remaining spread mixture on top.
  9. Garnish with nigella seeds and sesame seeds.
  10. Cook until crispy and brownish on all sides, for about 30 minutes, in a pre-heated oven at 200 minutes.
Spread Mixture
  1. Break the eggs in a bowl. Mix well with a wire whisk.
  2. Add the mineral water and mix again.
  3. Add the olive oil and mix again.
  4. Add the yogurt and mix again. The mixture is ready.
