Fish Stew / Balık Kavurma

Fener Kavurma 2This delicious Fish Stew has become our family week-end lunch lately. It is so easy, even easier when we prepare it all together. It needs rough chopping and in no time we are all at the table to enjoy this healthy recipe.

If available add baby shrimps, if not it will be still ok. Mushrooms make the dish juicy and invite the kids to start enjoying fish plates.

Fener KavurmaIt is a whole meal, so don’t worry about preparing anything next to it. If you have guests a basic salad will do.

I use salmon with this fish stew and the fishermen prepares it as I want; that is without the skin and fish bones and cut into large cubes. I guess other similar fish will be fine too. I hope you’ll enjoy.

Instructions
  1. Use a large pot.
  2. Cut the onions into 4 or 6 pieces.
  3. Add the olive oil and the onions. Mix once in a while for about 3-4 minutes.
  4. Chop the garlics, add to the onions.
  5. Peel the potato. Cut to thin slices.
  6. Add to the onions. Mix once in a while.
  7. Take out the seeds of the peppers and cut vertically into half and then to large pieces. Add to the pot.
  8. As soon as the peppers are some what soft, cut the tomatoes into 4 or 6 and add to the pot. Mix and cover the lid. Cook for about 3-4 minutes.
  9. Wash well the mushrooms and cut into 2 or 4 depending on the size.
  10. Add to the main pot.
  11. If available add also the baby shrimps at this stage.
  12. You do not need to add water as the mushrooms will leave of plenty of water.
  13. Finally add the fish. Somon works well with this recipe, but any similar fish will do. Have it cleaned and cut to large cubes. All the fish bones and the skin must be taken out.
  14. Add the bay leaves and all the other spices.
  15. Cook with lid covered, until the fish is done, which will take about 10 minutes.
  16. Garnish with chopped parsley.
