Grape Leaves Soup / Asma Yaprağı Çorbası

I hate to waste anything, this soup is a good way to use any grape leaves that is left perhaps after cooking grape leaves dolma. Is has a sour taste, delicious, healthy, warming and easy to prepare.

Start with washing the grape leaves, cut off the stem and discard the stem and then cut into thin slices. 

Then all you have to do is a bit of sauté. First the sliced leaves, then in sequence the onions, garlic cloves, tomato paste. All one after the other and all added to the same pot. Then goes the water, lemon’s juice and the spices. This soup doesn’t need salt as the leaves are already salty enough. You can leave out the meat bullion to keep it vegetarian.

  1. Cut off the stems of the grape leaves and discard. Wash well and cut to thin slices.
  2. Use a large pot, add three tablespoons of olive oil.
  3. Then add the grape leaf slices. Saute for 1-2 minutes.
  4. Chop the onion and the garlic. Add first the onions, sauté for 1-2 minutes. Then add the chopped garlic. And sauté for another 1-2 minutes.
  5. When the onions are translucent, add a tablespoon of tomato paste. Saute for 1-2 minutes.
  6. Add 1,5 litre of warm water. Stir occasionally.
  7. Also, add 75 grams of rice.
  8. When the water comes to boil, lower the heat. Let simmer until the rice is edible with no hard part in the middle.
  9. Add the half lemon juice and the remaining spices. Taste and adjust the amount. As grape leaves are salt, there is generally no need to add salt.
  10. Serve warm and enjoy.
