Again, here is a very common olive oil dish; Leeks. Surprisingly refreshing. Very easy to prepare. The sour taste is excellent, just enough so the kids can enjoy too. Healthy. A must try. Relatively cheap material. Served as a side dish, cold or at room temperature.
One of my mother’s favorite this time. It can be eaten as a main dish when on a diet too-this is what she often does.
Don’t forget to cut the vegetables diagonally. For a long time I didn’t know that the carrots were supposed to be cut diagonally too. However it does makes sense to make all the vegetables to look alike.
The reason why the leeks are initially cut diagonally is to make sure that their layers don’t get loose. Try and see if you like them. Don’t forget to add a small spoon of sugar to such cold-served olive oil dishes, it really makes a difference. And let cool with lid covered and then transfer to a serving dish. Enjoy.
