Meat Balls with Egg and Lemon ThickenningThis is really easy to prepare. It is like a whole meal, soup and meat balls in the same plate. If you have fresh, soft bread next to it, everybody comes to the table, really quickly. What else can a mother ask for.

You have probably read that there are many meatball recipes named after cities in Turkey, this meat ball is not named after a city but it is from Canakkale – Dardanelles.

Perhaps the only bad thing about it, is that  it is better to cook just before eating. Otherwise the rice in it becomes too soft and sticky. However you are free to prepare the meatballs before hand and cook just before serving.

Details of the recipe are provided below. All you have to do after making the meat balls is to place them in a flat dish or a tray. Add about 2 tablespoons of flour and make sure the meatballs are covered with flour all around.

Meat balls covered with flour If you are living in Turkey, just tell be butcher that you will make meat balls when you are buying meat. They are supposed to give you automatically meat from the flank of the beef. If not, this is what you should ask for.

Instructions
Meat Balls
  1. First prepare the meatballs.
  2. Chop the onion and the parsley. You can use a food processor for this if you like.
  3. The meat should be beef, grounded and from the flank part of the beef.
  4. Wash and drain the rice.
  5. In a mixing bowl add the meat, onion, parsley, salt, pepper, cumin and rice. Knead with your hands until well combined about 10 minutes.
  6. Meanwhile boil about a liter of water with 1/2 teaspoon of salt.
  7. Make small balls from the meat and place them on a dish or tray with 2 tablespoons of flour. Make sure all the little balls are covered with flour.
  8. When all the balls are ready drop them into the boiling water. Cook until the rice in the meat balls are cooked. You can understand by the looks or by occasionally tasting one. Close the heat, when the rice is ready.
  9. While cooking if unpleasent looking bubbles come up, just take them them with a spoon and discard them.
Lemon and Egg Thickenning
  1. Separate two egg yolks. Mix them shortly with a fork after adding a pinch of salt.
  2. Then add a lemon's juice to the eggs and mix again.
  3. Then add, while mixing, several spoons of hot water from the meat ball pot. After the egg mixture is also hot then add the egg mixture to the main pot, while mixing. Make sure you mix all the time. Until the egg mixture is combined. It will take only a minute.
  4. Serve warm. If possible cook this dish just before serving.
