Noah’s Pudding / Asure

Noah's PuddingWithout doubt Noah’s Pudding or Asure (pronounced assure) is one of my favorite desserts. I had always rejected to eat asure until I was about 23. One day a close friend of mine brought to the office for me. So I had to tasted it – I was surprised with the taste. I had always thought beans and dessert – strange. Believe me, it is worth all the effort. 

Asure not only is delicuous but also a social event for us. It is prepared to be shared. Once poured into small bowls it is sent out to neighbours and they in return fill it up with their own asure’s or other delights.


So what makes asure so special? There are so many different aspects of asure; it is related to celebrating the forgiveness of God for Adam’s sin, it is believed that it is related to the day Christ has risen high after death,  it is related to Mosses when he crossed the Red Sea, it is the day Noah found land. It is prepared every year in Turkey at the Muharrem month to celebrate sharing, to bring abundance to homes.

You start with soaking up the grains the previous night. You should use your, or your neighbour’s biggest pot. I took my mother’s. Next day you boil the chick peas, dry beans and the wheat grains separately. You can speed up the process of using canned versions of these. However don’t forget to wash them, or else they will be salty.


I guess the stage of taking out the peels of the chick peas might be the most boring. It is not too difficult as it might sound. Just squezze slightly and you will see that the peel comes out really easy. You might ask the kids to do it for you. Watch out that they don’t eat it up. If you don’t peel, the peeling will be in the pot and won’t look good.

Your main focus should always be in the main pot. Always make sure there is enough water, stir occasionally to make sure nothing sticks in the bottom. Meanwhile prepare the figs, apricots and the raising. The original recipes require a huge amount of sugar – 1,5 kg to be exact. I prefer to put 500 grams. Slice them thin. You will be using half of the raisins and the apricots in the main pot and the rest for decoration. I prefer not to put figs in the main pot as tend to darken the asure.

There are many versions in Turkey for preparing asure. I like to put an apple, an orange and an orange to it. Both sliced to cubes.

When the asure turns into pudding, close the heat and set aside to cool. Meanwhile prepare for garnishing. Here is my tray; full of things to put on the asure dish. I like it rich and abundant. However you can always choose to decorate simply. I have put up pictures of different garnishing versions above. It is totally up to you.

The night before
  1. Wash half a kilo of wheat grains about 7-8 times until running water runs clear. Boil about 10 cups of water and add the grains. Cook about 10-15 minutes. Close the heat and keep the grains in this water overnight.
  2. In a separate pot wash the beans and soak them in water overnight.
  3. In a separate pot wash the chick peas and soak them in water overnight.
On the day
  1. Choose a really big pot and put the grains and the water (if any left). Add hot water to cover. Start boiling. Once it boils reduce the heat.
  2. Cook the beans in a separate pot/pressure cooker until they are edible. When cooked drain and set aside. You may choose to use canned beans, but don't forget to wash them before adding to the wheat grains. Don't boil them separately if they are canned.
  3. In a separate pot/pressure cooker cook the chick peas until they are edible. When cooked drain and peel the skins. A gentle squeeze will be enough to do this. You may choose to use canned chick peas, then you won't need to boil them separately. However make sure you wash them and peel them before you add to the wheat grains.
  4. Add the beans and the chick peas to the main pot with the grains.
  5. Wash and add the rice to the main pot.
  6. The main pot should be in your focus. You can add warm water if necessary. You should occasionally stir, so the bottom doesn’t stick and the ingredients are mixed well.
  7. Take out the rind of an orange, peel the white part out and then cut to small pieces. Cook for 5 minutes, drain and add to the main pot.
  8. Peel the remaining orange. Cut to small cubes and add to the main pot.
  9. Peel an apple. Cut to small cubes and add to the main pot.
  10. Heat the milk and add to the main pot.
  11. Add a table spoon of honey.
  12. Add a pinch of salt, black pepper.
  13. When main pot starts to look like a watery pudding add 500 grams of sugar and cook for another 20 minutes.
  14. Cut half of dried apricots to small pieces and add to the main pot.
  15. Add 1 stick of cinnamon to the pot, later discard before serving.
  16. Wash and add half 100 grams of raisins to the main pot.
  17. In a small pot, put 6 cloves and add water to cover. Boil, drain and add the water of the cloves to the main pot. Discard the cloves.
  18. Cook for 5 more minutes. Close the heat and let it cool for about 15 minutes.
  1. It is believed that the asure must have 40 ingredients. So it is acually up to you the way you garnish it. You can either keep it simple or you can use all that comes to your mind and that your kitchen has.
  2. Cut the dried apricots to small pieces.
  3. Cut the figs to small pieces.
  4. Put the Noah's pudding to small bowls once it cools and decorate with all or some of the items listed under "garnish".
