Please don’t think that I have made up the name of this salad; although I do think Pink Sultan Salad is a pretty name. If you make a search on the web you will see that it is a common name; I could have easily called it Beetroot Salad with Yogurt, which is definitely not as romantic as the sultan one.
Although we prepare many different dishes with beetroot, we do not have many alternatives for red beetroot. This salad is a good alternative to eat this very healthy vegetable. As the beautiful color hints red beetroot is good for many things; it is an antioxidant, anti-inflammatory and detoxificator.
Another good point about this salad or perhaps I should call it a dip is that it can be prepared raw and needs only 3 other ingredients; salt, garlic and plain yoğurt. Low cost.
I choose to make this salad from raw beetroots. However many choose to boil it before hand. To boil all you have to do is cover the beetroot with water and boil until you can easily poke it with a thin knife. It will take around half an hour. When it is ready let it cool, peel and then go to the next step of grating.
When grating cut the beetroot into half and grate a half with the coarse side and the other half with the thinner side. Make sure you are wearing an apron as it is really a nice color but you wouldn’t want purple stains all over.
Measuer how much beetroot you’ve obtained and use more or less half of this amount of plain yoğurt. Do not add the yoğurt water, try to use the drier parts of the yogurt. Add crushed garlic and salt to taste. And there, you are allready ready to serve. Enjoy.
