Vegetable Soup is generally a soup in which you put all the vegetables that are left in the fridge. However it turns out so delicious that I thought I might post it anyway. I have to confess that I haven’t prepared with left over vegetables, they were all very fresh and delicious. I will definitely prepare this soup again with similar leftovers next time.
You have probably noticed by now if you are following my blog that I prefer to use pressure cooker as often as I can. It saves so much time and energy. I prepare this soup using pressure cooker too.
If you like or perhaps I should say if your kids accept to eat soup with particles cut all the vegetables to tiny and similar pieces. If not and you will end up using a food processor to make the soup smooth do not worry and cut to random pieces.
First saute the onion and garlic, and then the rest of the vegetables until they somewhat change color. Adding flour, chicken bullion and even butter is optional. So you can easily change this soup to a vegetarian version.
Turns out to be a thick, smooth and delicious soup. Afiyet olsun.
Plain Vegetable Soup / Sade Sebze Çorbası
Health, delicious, low cost, lots of veggies hidden inside.
Wash and peel and chop to small pieces all the vegetables. Don’t forget to discard the seeds of the peppers. If you are planning to use a food processor don’t worry about the sizes. If you are not going to use one cut them to similar sizes.
Place the large pot on the stove. Add the olive oil and the butter.
Add the chopped onion. Sauté until translucent.
Then add all the other vegetables and sauté until they somewhat change color.
Add a table spoon of flour, sauté until you start to smell the flour.
Then add hot water. Also add salt, meat bullion (optional) and cover lid to cook.
Check once in a while to make sure the veggies are cooked enough. When the veggies are ready to be eaten, use the hand food processor to have smooth soup – if you want.
Add more hot water if the soup has become too thick.
Boil once again and close the heat.
Serve warm. Garnish with chopped dill or parsley and a slice of lemon.
