Rocket Salad with Pomogranate and Walnuts/Nar ve Cevizli Roka Salatası

Rocket SaladIt took me quite a while to start enjoying rocket salads. Probably the ones that I had wheren’t dressed to my taste. Nowadays it is definitely one of my favourite salads. Try this recipe Rocket with Pomogranate Seeds, Walnuts, and Potato Rocket Salad.

Actually rockets are so healthy, it will be good as it is, with just a pinch of salt, 2 chrushed garlic cloves, some good quality olive oil and vinegar; your salad will be ready in no time. In this recipe I tried to add some color and more flavor to this gifted plant.

I know it is some time a burden to peel pomogranates, but when available efinitely worth the effort. Perhaps you are lucky to have some one prepare them for you. However I suggest you do it at home, and don’t buy it already peeled, they never taste the same.

Pomogranate

Among all the methods of peeling the pomogranate I decided on the one where you just observe the fruit. Cut off the top and bottom. Cut into half and gently peel the white parts and the seeds will come out easily. The method of cutting into half and patting on top makes too much of a mess.

Pomogranate Seeds

I suggest you to tear up the rocket leaves to bite size pieces with your hands. But if you have young people you are trying to introduce rocket to, it might be a better idea to cut to thin slices. Enjoy this delicious, salad alone or with fish. If any of the ingredients are not available, you can still go ahead and try. The taste of rocket is very strong, so it will cover up the missing item.

Instructions
  1. Put the potato in a pot with water to cover, some salt and boil until edible. Do not cook too much. Stick a knife in to the potato to understand whether they are ready.
  2. Wash and rinse the rockets thoroughly. You may throw away the thick stems, but there is nothing wrong with keeping the other stems.
  3. Either tear with your hands to easily edible pieces. or cut the rockets into 1 cm thick slices and put them in a bowl.
  4. Take out the seeds of the pomegranate and add. Make sure you do not add any of the peels of the pomegranate.
  5. Break the walnuts to large pieces with your hands or with a knife and add.
  6. Peel the potatoes and make small dices and add.
  7. Add all the dressing ingredients into a small bowl. Mix well and add to the salad bowl.
  8. Mix well altogether and serve.
