Instructions
The Soup
  1. Wash, peel and cut to cubes the potato and the carrot.
  2. Wash well the lentils.
  3. Chop the onion.
  4. In a large pot add 2 table spoon of olive oil and the chopped onions. Stir until the onions become soft.
  5. Add a tablespoon full of flour. Stir until the flour starts to smell and its clour turns brownish.
  6. Add the potato, carrot and lentils into the pot. Stir for a minute or two and cover with water and boil.
  7. Boil until lentils are edible. Taste one if necessary. This should take about 30 minutes.
  8. Use a hand blender to make the soup smooth or use a strained to obtain smoothness.
  9. This soup is supposed to have some thickness, but it should not turn into a pudding; so if necessary add some more boiling water.
  10. Add a chicken bullion if you choose at this point.
  11. Bring to boil one last time and close the heat.
To Garnish
  1. In a smaller pot add a table spoon of butter. Add red pepper flakes and dry mint. Stir until the butter bubbles and garnish each serving with this mixture.

Thanks for the great lentil soup recipe, Nese. I made this soup for my sister when I visited her at her home in Nashville, TN over Christmas. Having been raised in the South, we never ate lentils growing up. We didn’t know what we were missing. She loved my soup and was very impressed that you were managing to teach me a few things about cooking!
