Chicken Soup with Orzo / Sehriyeli Tavuk Suyu Corba

This soup is also called the Healer Soup. Whenever someone in the household shows signs of fever or cold it is quickly prepared. It is one of the basic soups in normal Turkish household. Actually this specific recipe is called Grand Mom’s soup in my household.

If you have have home made chicken stock ready it will be the best option; if not you can use a chicken bullion or ready chicken stocks. My recipe shows concentrated chicken stock.

The key to make this successful is not to include any white of the egg in it.

  1. Put a spoon full of butter in a pan add a glass of the orzo. Sprinkle a spoonful of flour. Stir 1-2 minutes until you smell the flour and the butter is melted.
  2. Add chicken stock or hot water with chicken broth tables while stirring. Some are against ready tables, but they are so convenient, I can't keep myself from using them.
  3. Add salt. Take into consideration the salt in your chicken tablet or stock.
  4. Cook until the water boils and the orzo is cooked. Taste a few orzo, if they don't stick to your teeth, it is ready.
  5. In a mid-sized mixing bowl separate 2 egg yolk. Beat a few times.
  6. Add a pinch of salt and half a lemon’s juice and mix.
  7. Add half a glass of cold water mix
  8. Then one at a time - add 3 tbsp of soup to the egg yolk mixture and mix.
  9. Then slowly, add this egg yolk mixture to the soup while continuously mixing it.
  10. Cook until the soup boils again and then quickly close heat.
  11. Garnish with melted butter and red pepper flakes.
  12. Serve lemon slices next to it.
