Turkish Ravioli / Manti

Turkish Ravioli - MantiI confess: as I live in Istanbul and ready made-quite delicious dumplings are sold in almost every market, I hardly ever prepare them myself. However I managed to spare some time and here is the recipe. The only bad thing about these dumplings it takes time to prepare then they are gone literally in seconds. Delicious, irressitable. I hope you enjoy.

I really hated recipes that say “as much flour that it takes” or “rule of thumb”. However when it comes to preparing a dough, it is something somehow you cannot escape. Nevertheless I gave exact measures, I’ve done many times, so hope you succeed too. Your objective is to obtain a stiff dough. It shouldn’t be too soft or sticky. After you obtain a big ball of dough, do not forget to keep it covered all along the process. Rest for about ten minutes. Then make small walnut sized balls to make the rolling easier. However if you are well experienced about rolling a dough, you can make larger balls. Then using a rolling pin obtain dough sheets with a thickness about 2 mm.

Cut these sheets to 2 cm squares. Place a pinch of filling in each square and follow the pictures to make fancy  looking dumplings.

There are many different methods about making dumpling bundles. So you can make an envelope looking one or a little purse looking one. You can even cut squares with a pizza cutter and not worry about the curling job. Which ever you choose as long as the filling stays inside the bundle, the taste will be the same. So really, don’t worry about it. 

Cook in a salted boiling water for about 8 minutes. Drain, save the water to make a delicious soup afterwards. I generally prepare Chicken Soup with Orzo with this left over stock and it turns out superb.

While  the dumplings are cooking you should prepare the garnish. The yogurt is really easy, just mix it with garlic. You can actually prepare the tomato garnish and the butter garnish together in the same pot, to make one less pot to wash. Garnishing with spices is totally upto each person. So I suggest you just put all the spices on the table so leave everyone get their on spices. 

Hope you will enjoy. It is definitely a whole dish, so do not prepare any appetizers or side dishes when you have manti.

Instructions
Dough and Packing
  1. Add almost all the flour - spare about a glass - into a large mixing bowl. Make a hole in the middle and also add the egg, water, salt and black pepper.
  2. Knead with your hands until you obtain a stiff dough.
  3. Set aside the dough, covering it with a clean kitchen towel for at least 10 minutes. Always keep dough covered with a cloth when you are not using/handling it.
  4. Sprinkle your workspace with some flour. Make small, walnut sized balls out of the main dough and sprinkle each with flour, spread it out with a rolling pin to achieve a thickness about 1-2 mm.
  5. Cut each sheet to small squares of 2cm. Put one on top of the other.
  6. Put small amounts of filling in each square.
  7. First fold one corner somewhat diagonally.
  8. Then turn it to the other side. While putting your finger in the middle, stick the other facing two corners to each other.
  9. Continue until all the material is finished. While you are doing this, put the little bundles to a tray, so they do not stick to each other.
  10. The important thing is to somehow stick the corners together, so if you find this method difficult, you can try other shapes, methods or even invent new ones. The taste will be the same.
  11. If you will not cook all of it, you can freeze them on a tray and then put them in a box/bag and keep them in the freezer.
Filling
  1. Filling is prepared raw. Just mix well all the filling ingredients and it is ready. Meat should be minced beef.
Yogurt Garnish
  1. Crush the garlic and mix well with plain yogurt. You may also choose to add a pinch of salt.
Tomato Garnish
  1. Add the olive oil to a small pot.
  2. Grate the tomato. If the tomatoes are not giving out color or not in season, you can also use ready tomato pure (about 200 ml) or tomato paste (2 tablespoons) .
  3. Add all the other tomato garnish ingredients. Cook until well combined. You may add several table spoons of hot water, if necessary to make it be liquid.
Butter Garnish
  1. Melt the butter in a small pot and add the red pepper flakes. Cook, mixing for a minute.
Cooking and Serving
  1. Prepare a big pot with 1.5 liter of boiling water and 1 teaspoon of salt. Add all the dumplings. Cook for about 5-8 minutes. Taste, when cooked enough, drain. Save the stock to make a soup later.
  2. First place the dumplings in every plate. Then the yogurt, then the tomato garnish, followed by the butter garnish. Sprinkle with spices and the plate is ready. Enjoy.
