Turkish Roasted Lamb / Kuzu Tandır

Ic Pılav TandirTurkish Roasted Lamb / Kuzu Tandır is one of the most delicious meat dishes you can have if you are ok with having meat and lamb. You might be surprised to learn that the preparation takes only 5 minutes.

The best part to use would be the arm of the lamb. It would be better to have it already chopped to large pieces together with the bones.

You will need half an hour to rest the meat in water . Then you need about 2 to 5 hours of slow cooking. You can speed up the hole process by using a pressure cooker.

I suggest you to serve it with Stuffing Pilaf and with Fruit Compote.

Instructions
  1. Place the meat in a bowl and cover with water. Rest for half an hour so the little bones and/or blood in the meat comes out.
  2. Rinse the meat under flowing water and dry with paper towel.
  3. Place the meat in a large pot.
  4. Also add the garlic cloves and the black peppers.
  5. Cover the lid and cook over low heat for about 2-3 hours until really well done.
  6. The meat will first leave its water and then will absorb it back.
  7. If by the time the meat absorbs back its own water the meat is not really well done as if it is almost separated from its bones then add about 100 ml of water and continue to cook until it is cooked.
  8. When the meat is ready and the water is all absorbed add a table spoon of butter and salt to taste. Gently saute the meat so it is slightly roasted on all sides.
  9. Sprinkle with thyme and enjoy.
