Turkish Tabbouleh / Kısır

KısırKısır is the Turkish tabbouleh which is delicious bulghur salad. In Turkey there are many different versions of kisir according not only to regions but also according to who is making it. When a group of ladies talk about kisir, everyone will be willing to share her own recipe in Turkey. I got my recipe from a friend who is from Adana, which is city located in South Eastern part of Turkey. This city is very hot during summer and this salad goes best to refreshen, so I chose to share this recipe.

It does not require much to prepare the kisir. Basic ingredients are bulghur, tomato paste, onions. With other ingredients you can pla around. For instance if you don’t have thyme, you can do with out. You will need to do some chopping. Such as banana peppers and spring onions and pickles will need chopping. Try to make them similar sizes as much as possible. You can use the processor to chop the onion and the parsley to make your life easier.

Kısır preperation

Serve at open buffets, barbeque parties, tea parties, or as a side dish. This is again a very healthy recipe. Enjoy.

Instructions
  1. Chop well the onions and chrush the garlic cloves.
  2. Add half of the olive oil in a pan and heat it.
  3. Put the chopped onions and cook until onions become soft. Then add the garlic and saute for a minute.
  4. Add the tomato and pepper pastes and stir all together.
  5. Add 2 glasses(400ml) of warm water stir and let to boil for a short while.
  6. Put the bulgur in a large seramic or glass bowl and add the onion/water mixture. Stir so that no dry bulgur is left and cover a lid. The bulgur will soon absorb all the water.
  7. After 10 minutes mix the bulgur again and taste if it is not soft enough add some warm water, mix and wait another 5-10 minutes.
  8. Meanwhile cut to thin slices the spring onions. If they are thick, cut them vertically once first, and then dice them into small pieces.
  9. Chop the parsley.
  10. Chop the mint leaves.
  11. Clean the banana pepper's seeds and chop to small cubes.
  12. Chop the pickles to similar sized cubes.
  13. If you want to add fresh tomatoes you should take out the middle part with the seeds as might make your too wet.
  14. Mix everything together, in the large bowl with bulghur, including the remaining olive oil and all the spices. Mix well. Wait for 10 minutes so that the tastes and the aroma is absorbed.
  15. Taste it and add more spices if you want.
  16. Line a serving dish with salad greens or boiled vine leaves and top with the bulgur mixture, as seen in the picture. Garnish with sliced tomatoes or pickles. Serve at room temperature.
