Zucchini Pancakes / Kabak Mucver

I have a soft spot in my heart about mucver – the zucchini pancakes. It was mucver that started off my cooking lessons. Several years ago we had a lovely German family living next door. To be nice and welcoming, one day I presented them a plate of zucchini pancakes. My dear neighbour liked them very much and wanted to learn more. She gathered several other friends of hers and I was able to give my first cooking lesson. Then the rest followed. So even now, I will never forget her and the zucchini pancakes.

And not to forget, all the family likes zucchini pancakes. The frying part is a little heartbreaking. But you always have the option to prepare the same material and pour it in a oven tray and cook like that. Just make sure to oil the tray and that the mixture is not thicker than 2 cm so that the middle gets cooked.

  1. Wash, peel and grate the zucchini. Use the harder side of the grater. Sprinkle with salt. Keep it aside, waiting to leave out the excess water.
  2. Wash and then chop parsley and dill.
  3. Wash and grate the cheese.
  4. In a mid size bowl break and whisk the eggs and and the spices whisk again. While adding spices the recipe states tea spoons but you can adjust according to how salty your cheese is, or how much spices you like.
  5. Put the zucchinis in a cullender and squeeze out the excess water by pushing down the zucchinis and add to the eggy mixture.
  6. Add gently, slowly the flour and the baking powder. The amount of water in zucchinis may change; so the amount of flour might change. Add enough flour to achieve a mixture that is fluid but not too liquid.
  7. Heat oil in a frying pan. Place spoonful of the mucver mixture and pat on each top to make it thin, so the middle of it is cooked as well. Make sure that each mucver pancake is not touching the other, so they don't stick. Cook both sides until golden brown at medium heat.
  8. Drain excess oil on paper tower. Serve warm or cold with plain yogurt.
